A Chinese Tradition: Dim Sum
Teahouses across China must have been very popular among travellers making their way up and down the Silk Road, and farmers in need of refreshment and relaxation after a long day in the fields. Dim sum, which can be variously translated as ‘heart warmers’, ‘heart’s delights’ or ‘to touch your heart’, is a Chinese eating custom originally from Canton, where customers were served snacks to nibble while sipping tea. Nowadays, dim sum consists of a variety of dumplings made of flour-based edible wrappers or inedible wrappers made of lotus or banana leaves, served in small portions and usually in the bamboo baskets in which they have been steamed, to keep them warm. Lighter, steamed dishes are served first, followed by fried dishes and finally dessert. In traditional restaurants the food is wheeled around on trolleys, but it is more and more common to order by ticking a number of options on an incredibly long menu. In X’ian, a city in the north of China, dim sum dinners or ‘dumpling banquets’ are actively promoted by the local tourist board and travel agents as a must-do experience. The tastes, colours and shapes of the dumplings, many of which are inspired by unusual stories, deeply rooted in local culture, are combined to create spectacular displays.
